In general, if you roast these centrals anywhere north of second crack, you've ruined their max flavor potential.

I roasted a batch of your Honduran COE last weekend and really enjoyed it. I really like a complex flavor profile with good body; i.e. not too tea-like, and this was just right. Baker's chocolate with herbal/floral bits and a lot of complexity to keep my palate wondering. :tu

Glad you liked Honduras COE. Their coffee isn't talked about much. While they don't take you through a wild ride, they shine when roasted right.
